Homemade “Pudding” Puffs!

Make Your Sweetie These Easy and Delicious Treats!

There is nothing better than a sweet way to end an amazing meal. Dessert does not have to be super complicated to be really tasty! With all the busyness of life, it’s really good to have some simple dessert recipes on hand. Homemade Pudding Puffs are a fun take on cream puffs. All you need is simple ingredients, and in no time you will have an impressive but easy-to-make dessert everyone will love!

To make your own batch of pudding puffs, you will need 1 cup of water, ½ cup butter, 1 cup of all-purpose flour, 4 eggs, and 2 cups of your favorite pudding. Chocolate is a great pudding option! You can choose to garnish your pudding puffs with some melted milk chocolate, but that is totally up to you. These ingredients should be super easy to find in your pantry!

Pudding Time!

Before you start making the “puff” part of the pudding puffs, you will want to make your favorite pudding recipe. You can make your pudding from scratch, or to keep this recipe really easy use your favorite instant box pudding mix. A small box of instant pudding mix makes about 2 cups of pudding, just enough to fill the puffs in this recipe. 

Follow the directions to make the pudding, and put the pudding in the fridge to harden up a bit. You can make the pudding the night before too, that will help you save even more time when making your pudding puffs.

When you are ready to start making your puffs, go ahead and preheat your oven to 400 degrees Fahrenheit.

All About The Choux

Choux pastry, or pâte à choux, is a delicate pastry dough used in many pastry recipes. Choux is a basic dough made from water, flour, eggs, and butter. The dough when baked will be light and fluffy, giving you the perfect shell for your pudding filling.

To mix up your choux dough, start by adding the water and butter into a small saucepan (2 ½ quarts is a good size). Heat the water and butter until a rolling boil. Reduce the heat to low, and stir the flour in. You will want to stir quite vigorously for about a minute or until the mixture forms into a ball.  

After the mixture has formed into a ball, remove it from heat. Your next step is to mix in your eggs, one egg at a time. A good tip is to transfer your choux dough to a stand mixer, and on medium speed, add one egg at a time. Keep mixing until the dough is well mixed and smooth. 

Let’s Bake the Puffs!

For this recipe, bite-size puffs are a perfect size. To create that size, use a cookie scoop. Drop the dough by the scoop onto an ungreased cookie sheet about 2 inches apart from each other. The dough will expand and grow a bit during baking. 

Bake the puffs for about 30 minutes. These puffs really require you to watch them a bit during baking, since every oven is different. You want to bake the puffs until they are puffed, and golden. If you overcook the puffs, they will fall after cooling. Just keep an eye on your puffs after 20 minutes of baking.  

After the puffs are fully baked, allow them to cool in a place that is free from drafts. 

Fill The Puffs Up!

After your puffs are completely cool, it’s time for filling! There are 2 different ways to fill the puffs. First, you can carefully cut off the top of the puff, remove a little of the dough strands inside, and spoon the pudding inside. Add the top back on your puff.

Another way to fill your puffs, and our favorite way to fill is to use a piping bag, and a bismarck decorating tip. This tip is very long and allows you to fill your puff by only making a very small hole. You can fill from either the top of your puff or the bottom. When filling with the piping bag, gently squeeze until you feel the tip start to move up in the puff. This is telling you this puff is full, time to stop!

Make Them Pretty

After your puffs are all filled, you can decorate however you would like. You can dip the whole puff into chocolate, and add some fun sprinkles. A really easy, elegant way to decorate is to just drizzle some melted chocolate.

Ingredients
  

  • 1 cup Water
  • 1/2 cup Butter
  • 1 cup All-Purpose Flour
  • 4 Eggs
  • 2 cups Prepared Pudding for Filling

Instructions
 

  • Preheat your oven to 400 degrees Farenheit.
  • In a small saucepan (2 1/2 quart is a good size), bring water and butter to a rolling boil.
  • Reduce heat, and stir in flour. Mix for 1 minute or until the mixture forms into a ball.
  • Transfer mixture to a mixing bowl. Using a mixer on medium speed, add 1 egg at a time to the mixture. Mix until the dough is smooth.
  • Using a cookie scoop, drop dough on an ungreased cookie sheet, about 2" apart.
  • Bake about 30 minutes or until the puffs are very puffy and golden.
  • Cool away from any drafts for 30 minutes.
  • After the puffs are completely cool, fill by gently cutting the top off the puff, and spoon the filling in. Replace the top. You can also use a decorating bag and tip to fill the puffs.
  • Decorate your puffs as desired, and enjoy!

Notes

Enjoy your puffs within a day or two. They can get soggy after sitting for some time in the fridge.
